We sell limited quantities of natural grassfed beef, on-the-hoof, to quality-minded customers in our area. Steers should yield slightly over 50% of the on-the-hoof weight in meat (including variety/organ meats; slightly less otherwise). We have state-certified scales to weigh the steer. If you have neither a trailer to haul the animal nor arrangements for butchering, for additional cost we can take care of these tasks for you by transporting the animal to a licensed processing facility nearby. You are then provided with a “cut sheet” so that you can give instructions on types of steaks and roasts that you want, along with details such as steak thickness, individual package sizes, whether you want to keep organ meats, etc. Then you can arrange to pick up the frozen labeled packaged meat from the processor, or for additional cost, we can deliver the meat to you. These steers are healthy and wholesome --- no crowded feedlots, no antibiotics or growth hormones --- they are relaxed free range pasture-fed animals. The meat is absolutely delicious. We believe that after you have bought one, you will want to purchase another one each year for your annual supply of beef.
If you have read this far and are still interested, but you are concerned about freezer space and/or the cost of a “whole” beef, please consider the following:
- You can fit a 600 pound steer into about 10-12 cubic feet of freezer space, so if you’ve got a big freezer (say, 22 cu. ft.), you’re probably in great shape. Even for a smaller freezer (14-15 cu. ft.), you might need to empty it a bit, but it’s not an unreasonable fit.
- If it still sounds like “too much at a time”, consider splitting a beef with a friend or relative. You can make arrangements for a left/right split with the meat processor, and each would get equivalent meat, although each person could give different instructions for cuts and packaging. (Quarter splits are generally not a good idea, since front and hind quarters differ in cut types and tenderness.)
