Green Chile Cheese Soup

 

This is quick, simple and delicious.

 

¼ C. flour

¼ C. butter

2 C. milk

½ C. chopped green chile (should be roasted and peeled; fresh is best, frozen is next, canned can be used as a last resort)

3 slices good quality sliced American cheese

½ t. Tabasco or other hot sauce

Salt and pepper to taste

 

Use a medium-sized saucepan and medium heat on a stovetop burner. First, melt the butter. Add the flour, and stir constantly till the flour is cooked but NOT browned. Add the milk and stir constantly until thickened. Add the green chile, Tabasco sauce, and cheese, and stir constantly until cheese is melted, but do not allow to boil. Add any “extras” that you like, and heat through. Add salt and pepper to taste. Serve immediately.

 

Additions to the soup that have been taste-tested successfully are: sliced or chopped mushrooms, cooked wild rice, chopped onions, and crushed garlic. All of these together, or any combination, are very tasty.

 

Serves 2 (in bowls), or 4 (in cups).
