Carne Adovada

 

Any cheap pork cut (chops, steak, ribs), 1 to 2 pounds

Crushed or ground red chile

Oregano

Salt

Garlic powder

 

Mix a cup or so of crushed chile (or chile powder) with a little bit (about ½ t. each) of oregano, salt, and garlic powder. Add water to make a very wet paste (thicker than gravy, thinner than peanut butter) and mix well. Coat each piece of pork with the paste, cover and refrigerate for one or two days. Transfer to a baking pan, add about ½ C. water, and bake, covered, for 2-3 hrs at 300 degrees. Uncover and bake just until there is no liquid at the bottom of the pan.
