Here’s a recipe given to me a long time ago by Bernie Zoppetti that we’ve used many a time. Quick, easy, and tasty, it works as a sweet side dish or as a dessert.
Pineapple Bake
1 (regular-sized) can of crushed pineapple (drain and save 1/3 of the juice)
1 stick butter
¾ C. sugar
4 eggs
4 sliced of bread, cubed
Preheat oven to 350ºF. Beat sugar and butter. Add eggs. Fold in pineapple and bread cubes. Put mixture in greased casserole dish. Pour pineapple juice over mixture. Bake for 45 minutes or till golden brown on top.
By the way, this is DELICIOUS with pineapple, but when we have an overabundance of some other type of fruit, we’ve sure substituted a time or ten. Peaches, plums, whatever, and the quantity isn’t really critical. Just use somewhere in the neighborhood of 1 to 3 cups of fruit.
